What is Starch?

Starch is the most common form of carbohydrate in our diet. Carbohydrates are organic compounds consisting mainly of simple sugars, starches and fiber. Starches are long complex chains of simple sugars. This is why they are often called “complex carbohydrates”.

Simple sugars: Monosaccharides and Disaccharides

Monosaccharides are the simplest types of sugars, and are building blocks for the larger carbohydrate molecules. The most common is glucose. All the carbohydrate in our food must be broken down into monosaccharides to be absorbed by the small intestine.

Disaccharides are combinations of two monosaccharide molecules. For example, a molecule of sucrose (table sugar) is made up of one molecule of glucose and one of fructose. Lactose, the sugar in milk, is made up of glucose and galactose. Disaccharide molecules must be split up to be absorbed.

Starchy Foods and Low-Carb Diets

Low-carbohydrate (low-carb) diets usually involve cutting out most starchy foods. These diets tend to be high in fat, and eating a high-fat diet (especially saturated fat from foods such as meat, cheese, butter and cakes) could increase your risk of heart disease. Low-carb diets could also restrict the amount of fruit, vegetables and fiber you eat.

Low Starch Diet and Ankylosing Spondylitis

According to research from King's College, London, microbes from the bowel flora depend on dietary starch for their growth and therefore a reduction in starch intake might be beneficial in Ankylosing Spondylitis patients. A "low starch diet" involving a reduced intake of "bread, potatoes, cakes and pasta" has been devised and tested in healthy control subjects and Ankylosing Spondylitis patients. The "low starch diet" leads to a reduction of total serum IgA in both healthy controls as well as patients, and to a decrease in inflammation and symptoms in the AS patients.
